This is soooooo easy, yet looks quite festive, tastes delicious and is healthier than many of our old time picnic recipes!
Caprese Salad Kabobs!
12 appetizer skewers
24 fresh cherry tomatoes
12 cherry sized mozzarella balls (vegans can use artichoke chunks or plump mushrooms).
1 medium zucchini, cut into chunks
Handful of fresh basil leaves, finely chopped
Roll the mozzarella balls in the finely chopped basil, and then alternately thread 1 tomato, 1 cheese ball, a chunk of zucchini and then another tomato on each of the skewers.
Whisk olive oil and vinegar to drizzle over the kabobs, or use your favorite lite summer dressing.
Salt and pepper to taste.
How easy is THAT?!
