Ingredients:

  • 1 large bunch of Kale
  • 1/2 cup extra virgin olive oil
  • 1/8 cup balsamic vinegar
  • 2 Tbsp. soy sauce
  • 1 tsp. crushed garlic
  • 1 Tbsp. maple syrup

Wash the Kale, spin it dry and cut up for salad.

Mix the dressing together and shake well.

Add a bit of the dressing to the Kale and massage it in with your hands. Massage for several minutes and the toughness of the Kale will disappear so that the raw Kale is much easier to eat!

Add a handful of crushed walnuts or grated Pecorino cheese (optional)
