This is one of my favorite recipes for a special dinner!
1 lb. scallops
1 tblsp. sesame oil
1 bunch of arugula (we use about 5 oz.)
1 cup red wine vinegar
1/2 cup toasted sesame seeds
salt and pepper to taste
Rub sesame oil lightly on all the scallops, then sear them in a skillet until lightly browned on all sides.
Bring the red wine vinegar to a boil in a small saucepan, then reduce the heat to low; simmer until sauce reduces slightly and is thick enough to coat the back of a spoon, about 10 minutes.
Add a bunch of arugula to each plate, arrange scallops on top, then drizzle the reduced vinegar over them, add the toasted sesame seeds, salt and pepper and prepare to eat this feast! Yummmm.
